Vaca Atolada is a top favorite at Khipi. It is a simple stew made with short ribs that are slow-cooked for hours and seasoned with onions, garlic, red wine, and tomatoes. This popular dish hails from the state of Minas Gerais in southeastern Brazil. Ellen and her son Eder Jr. hail from South Eastern Brazil, and they introduced this meal to Khipi.
This is one of Eder’s favorite dishes, and this is what he had to say when he tried our scaled version of his mother’s cooking - “ My mom wasn’t able to give feedback on Khipi’s Vaca Atolada as she didn’t get to eat a single spoon of the dish. I didn’t leave any for her. It was SOOOOO DELICIOUS!! I had never eaten meat as tender as that one before; it was exploding in my mouth. This dish was KHIPI AMAZING!!!!
This dish will be served with a side of white rice and yuca.
