If you are a foodie and you’ve heard of David Chang’s Momofuku restaurant in NYC, then you must have heard of his famous yet simple recipe for the traditional South Korean dish, Bo Ssäm. It is a slow-roasted pork shoulder cooked for 9 hours in a sugar-salt rub and served with lettuce, rice, ginger scallion sauce, kimchi, and Ssäm sauce. It is a super tender, slow-roasted pork shoulder that needs to be wrapped in rice and lettuce, then dipped in both sauces and devoured with a smidge of Kimchi. Get your hands dirty.
