Since summer is all about fresh vegetables and travel, Khipi will be cooking some Catalan and southern Spanish food. This soup is from the south of Spain and has a lot of fresh zucchini, and is flavored with olive oil, garlic, onions, and cheese. Shrimp with head-on cooked in salt, lemon juice, and olive oil. This dish will be accompanied by a simple Catalan spinach salad sauteed with walnuts, almonds, pine nuts, apricot, shallots, and olive oil.
