Barberries, or in Persian, zereshk, are tart and tangy dried berries about the size of a currant. This dish includes layers of plain basmati rice and saffron-infused basmati rice that is flavored with dried barberries, butter, and a touch of sugar. The rice is served with slow-cooked chicken thighs that are simmered in onions, tomato, garlic, black pepper, and turmeric. This meal comes with a side of Mast-o-khiar (Yogurt dip with walnuts, mint, and rose petals) and Shirazi Salad - cucumber, tomato, red onion, and mint salad.
