Shrimp Mozambique (camarão a Moçambique) is a dish served in this East African country and is made with Shrimp, garlic, white wine vinegar, onions, saffron, parsley, and an African pepper called piri piri. Since it is not easy to get piri piri we made our own piri piri blend with basil, roasted pepper, chili flakes, and garlic powder. This dish is served with a side of peach and lettuce salad and Xima, Xima is a very particular starch available all over Mozambique. It is a corn porridge that is a cross between grits and porridge. It is cooked with garlic, coconut milk, and cassava leaves.

Note: Xima does get hard overnight and can be softened with warm water. If you don't want to take this extra step then we are happy to substitute with white rice if you leave a note.

This is a gluten-free and dairy-free dish.
