Matoke, known in English as the East African Highland banana, is a staple around East Africa, particularly Uganda and Tanzania. In our version of Matoke, we steam unripe bananas and then cook them in a broth of small red beans and small beef chunks which are simmered in a simple base of onions, garlic, tomato, and cumin. This dish comes with a side of Groundnut sauce (or ground peanuts cooked with tomato, paprika, cumin, and onions), sautéd collard greens, and steamed sweet potatoes. This is a gluten-free and dairy-free meal.
