Uzbekistan is somewhat of an enigma. Not as many travelers visit Central Asia, so Uzbekistan and its wonders remain a mystery to many people. I only know about this country from stories we read about Samarkand and Bukhara and stories from my aunt and uncle who were posted there as part of the Indian embassy. This recipe is from their chef. Plov (or palov), a rice and lamb dish with carrots and spices. It’s great for kids. This dish will be served with Achichuk or tomatoes and onion salad, roasted baby potatoes, and a yogurt and mint dip. This is a gluten-free dish.

Yogurt dip is packaged separately and can be omitted for dairy-free orders.

Ingredients: Lamb, onion, carrot, cumin, turmeric, coriander, chickpeas, raisin, salt, rice, pickled dill, dill leaves, tomato, roasted baby potatoes, yogurt, mint, olive oil, canola oil, sugar, white vinegar.
