Bangladeshi Wedding Roast Chicken, or Biye Barir Murgi Roast, is a misleading name for a fantastic dish. First, it is not roasted, as ovens are not a common way of cooking food in South East Asia; second, this dish is layered with ground poppy seeds and cashew paste, which are not common roasting ingredients. This dish comes with a side of Begun Bhorta or roasted and mashed eggplant and white rice. In the towns and cities of Bangladesh, bhorta is integral to everyday food habits as it is a mash of different vegetables or fish.

Ingredients: Chicken leg quarters, eggplant, onion, ginger, garlic, poppy seeds, cashew, cardamom, mace, cinnamon, cloves, cumin, Kashmiri chili powder, green chilis, bay leaves, nutmeg, yogurt, whole milk, butter, rose water, and mustard oil.
