Kabuli Pulao is the national dish of Afghanistan. This dish is equally owned by the Kyhber-Pakhtunkhwa Province in Pakistan. According to research, the word was created by the wealthy families of Kabul who would serve it on special occasions. Over time, the name changed from Kabuli Palau to Qabili Pulao, as the word Quabil means “capable” or “skilled.” This dish is layer upon layer of flavor. It combines Basmati rice flavored with cinnamon, black cardamom, pepper, cumin, and sugar. The rice is tossed with carrots and raisins and steamed with slow-cooked lamb cooked in an aromatic stock of spices.
This dish will be served with Borani Banjan or grilled eggplant with a tomato and yogurt mint sauce.
Ingredients: Basmati rice, lamb, carrots, onions, garlic, raisins, cumin, cardamom, cinnamon, clove, bay leaves, sugar, salt, black pepper, canola oil, yogurt, mint, almonds, tomatoes, eggplant, turmeric, and canola oil.
