The food of Myanmar is a little more oily and a little less spicy than what we’re used to in Southeast Asia. Pork pairs well with something tart and sour that cuts through its richness. Pickled green mango does exactly that. This dish will be flavored with fish sauce, a smidge of shrimp* paste, curry powder, palm sugar, onions, garlic, ginger, and tamarind water. Think sour thoughts!:)
It comes paired with jasmine rice and ginger, cilantro, lettuce, cabbage cashew salad.
