This Mexican dish hails from the coastal town of Veracruz in the southeast of Mexico. It is traditionally made with red snapper. The dish represents a union of two cultures on both sides of the Atlantic. It is a simple stew of fish cooked in a broth of tomato, onion, capers, olives, and banana peppers. This simple dish comes paired with steamed rice. Substituting Tilapia in place of Snapper.
