Tender and supple pieces of pork melt in the mouth as a collision of flavors jolt the senses - I close my eyes and this is my first memory of Coorg - coffee plantations in South Westerns India, arriving there on a rain-soaked evening in a rickety bone juggling bus ride from Bangalore. This succulent pork dish is made with the usual spice mix of onion, ginger, garlic, turmeric, mustard, methi, and the special Coorg Vinegar. This dish will be accompanied by rice, Akki Roti (rice and rice flour rotis), and coconut chutney (curry leaves, ginger, mustard seed, green chillis).
