Vaca Atolada is a top favorite at Khipi. Vaca Atolada is a simple stew made with short ribs that are slow-cooked for hours and seasoned with a simple mix of onions, garlic, red wine, and tomatoes. This dish is a typical dish from the inner regions of Brazil, particularly in the state of Minas Gerais in southeastern Brazil. Ellen and her son Eder Jr are immigrants from Brazil. They were one of the early ambassadors who introduced this meal to Khipi. 

This is one of Eder’s favorite dishes, and this is what he had to say when he tried our scaled version of his mother’s cooking - “ My mom wasn’t able to give feedback on Khipi’s Vaca Atolada as she didn’t get to eat a single spoon of it ( emoji). I didn’t leave any for her. It was SOOOOO DELICIOUS!! I had never eaten meat as tender as that one before; it was exploding in my mouth. This dish was KHIPI AMAZING!!!!

This dish will be served with a side of white rice and a Brazilian side salad.
