Koshari is Egypt's national dish and a popular street food in Cairo. It is a winning combination of rice, pasta, chickpeas, and lentils, seasoned with a tart and spicy tomato paste and fried onions. While Koshari is usually eaten by itself, we combine it with Egyptian chicken kebabs called Shish Tawook—juicy chunks of chicken marinated in yogurt and a light spice blend. This meal is accompanied by a traditional Middle Eastern salad.
