Ambul Thiyal is a celebration of the spices grown in Sri Lanka and has a distinct sour flavoring from the garcinia fruit. Souring is a way of preserving this dry fish curry. Traditionally the fish is marinated in a mix of dry spices and then slow-cooked in a clay pot. This dish will be served with Parippu (Dhal Curry or Red Lentils) and Coconut Rice.
