Ohn No Kauk Swe is Myanmar’s much-loved coconut chicken noodle stew. I love serving this for dinner for kids and grown-ups as it comes with a bunch of toppings, and everyone is involved in making their own meal. This aromatic and textured dish has a thick, soupy base flavored with coconut milk, fish sauce, and toasted chickpea flour. The dish is accompanied by egg noodles and a number of toppings: sliced fried garlic, caramelized shallots, cilantro, sliced lemon, and boiled eggs.
Add a note if you want to substitute the toppings of cilantro and eggs with scallions. Add a note if you wish to rice noodles instead of egg noodles for a gluten free option.
Ingredients: Boneless chicken thighs, onion, ginger, coconut milk, chili powder, turmeric, toasted chickpea flour, egg, cilantro, fried garlic, fried shallots, lemon, coconut milk, fish sauce, noodles, canola oil, and salt. *Cilantro and eggs are optional toppings packed separately.
