Let's talk meatloaf. Gravy or no gravy, ground pork and ground beef, or just ground beef, ketchup, or no ketchup? If you grew up with a designated meatloaf pan in your house and now have serious opinions about the ground meat ratios and the role of ketchup and the role of ketchup, then you will be surprised. Belgian meatloaf has no ketchup or gravy (but we will serve gravy). It is a simple mix of ground beef with thyme and rosemary and a side of steamed leeks in a light lemon mustard vinaigrette. This dish will be served with mashed potatoes, an apple walnut, and a lettuce/endive salad.

Ingredients: Beef, shallots, thyme, rosemary, eggs, breadcrumbs, butter, mustard, salt, leeks, white wine vinegar, olive oil, parsley, apples, lettuce/endives, walnut, lemon juice, goat cheese.
