This dish was inspired by a meal Lymaris had at the Italian Culinary Institute. It is a flavorful dish with minimal ingredients. Pollo Alla Romana is chicken (thighs) braised in a simple tomato sauce and a mixture of red and yellow peppers. Lymaris is adding a Latin twist to this dish by adding a side of arroz blanco (white rice Puerto Rican style!).
