This is a traditional and popular dish from the city of Shiraz, in Iran. Kalam Polo consists of cabbage and small meatballs layered into the rice. The rice is cooked in a tomato base and infused with an exotic combination of spices (like saffron and rose petals), herbs, and topped with Iranian barberries called Zereshk.
