“Mexican Cuisine” (“Cocina Mexicana”) broadly describes cooking from any and all parts of Mexico. In Acapulco, Mexico, you can find a taste of every different type and variety of Mexican cooking. Local Guerrero-style cuisine from Acapulco relies heavily on seafood, as well as meat with a mix of spices.
This week Chef Edwin is creating his own family-style version of Chicken Enchiladas Acapulco with Mexican Rice. The Enchiladas will include chicken seasoned with tomatoes, cilantro, green onions, and olives layered with mozzarella and cheddar cheese.
Tortillas will be grilled individually. The salsa that will be poured over the chicken and tortilla will include Anco chile, chile pasilla, garlic, tomatoes, oregano, cumin, and olives. The dish comes with a side of pico de gallo and sour cream.
