The origin of this dish lies in Moorish food which loosely means cuisine that sprang up as a result of the Arabic occupation of North Africa in the eighth century. I learned this recipe from a Moroccan roommate. I add some mint and spinach for flavor. It's a simple tomato and warm spice rice with grilled eggplants and chickpeas.

The non-Vegetarian version is available with grilled chicken.
