Nothing says more Holidays in Puerto Rico than “arroz con gandules” or rice with pigeon peas. You will find it in literally every single holiday party, and/or household. It is usually paired with “pernil” which is a variety of different roasted pork cuts. I would like to bring you a taste of Christmas in Puerto Rico, with “Arroz con gandules y lomo de cerdo al horno”. This rice has the traditional sofrito criollo as seasoning (which is a blend of cilantro, coriander leaves, peppers, onion, and garlic) and annatto oil will give it coloring. The pork will be seasoned with garlic, oregano, and paprika.
