Pollo Guisado is a one-pot stew that is made in different ways in El Salvador and neighboring countries. This is a homey chicken stew with sofrito, annatto peppers, coriander, cilantro, tomatoes, bell pepper, garlic, carrots, potatoes, onions, celery, and seasoning that includes pumpkin seeds, sesame, thyme, and cloves.....mmmm can't wait to sit in the kitchen and smell like this stew.
