Chef Lymaris' comfort food for cold nights is an Asopao! (aka soup). In Puerto Rico, whenever it rains, the weather gets "cold", or if you have a hangover, or when the party is getting late and people are still hungry, they make an asopao to warm up! This dish is a thick soup, that has a sofrito and shrimp stock base, rice, carrots, potatoes, roasted red pepper, and shrimp, topped with coriander leaves. To accompany it, Puerto Ricans usually eat it with tostones de plátano, which are double-fried plantain thick chips. Yummmmmm! Can you think of a better way to enjoy fall?
