It's Diwali and it's time to sparkle and celebrate the new year with friends and family. I really wanted to bring shrimp to the table as I love seafood and this is what I would make for my guests on Diwali night. It's a spice-filled rice mix -think bay leaves, onion, peppercorn, garam masala, turmeric, nutmeg, and garlic, with a dash of fresh cilantro leaves, a healthy dose of coconut milk, a smidge of tamarind, and shrimp. This dish comes with a side of apple raita - yogurt sauce with apples.
