Paka refers to a silky coconut-milk-based curry base popular in East African cuisine. Fish curry is popularly called Macchi paka in Tanzania and is traditionally cooked with grilled white fish. In our version, we use Salmon, and this is how a Khipi customer from Tanzania describes this dish - "OMG, This is good!!
