Sultan's Delight, which translates to Hünkar Beğendi, is a Turkish beef/lamb ( we will use beef short rib) stew served over an aubergine bechamel sauce. This dish hails from the Ottoman palace kitchens and is embroiled in history and a love story. Some legends say it was created on a hunting trip for Sultan Murad IV, and some say Sultan Abdülaziz offered it on a trip to France, where he fell in love with the emperor's wife - Queen Eugenie. This dish is truly delightful as it balances the delicate sourness of the meat with the cheesy, creamy eggplant.

Ingredients: Beef Short Rib, eggplant, onion, garlic powder, cumin, nutmeg, cinnamon, allspice, tomato paste, cane sugar, lemon juice, balsamic, vinegar, red cooking wine, pepper, paste, tamarind paste, black pepper, salt, parsley, milk, flour, butter, manchego cheese, and canola oil.
